How Data Science and AI can impact Food Processing and Products industry

I have known an entrepreneurial couple in Kenya for over two decades, and they are now spearheading the business of Njoro canning / Kenya Orchards Limited factory that is a known name for over 50 years in the agribusiness and food processing sector in Kenya. It is involved in the cultivation and processing of fruits, vegetables, spices to create a variety of products such as Jellies, Jams, Sauces, Juices, essences, baking industry ingredients, spices that are consumed in almost every household in Kenya or as ingredients by other industries. I see their brands in all the big retail chain outlets across Kenya and East Africa.

Prity, the better half of the couple, has been facilitating me over the last six months to understand the economy, connect me with the industry stalwarts, brilliant young entrepreneurs to get a foothold into the East African markets. I keep interacting with her about their food processing business. From the insights I got about the challenges and market dynamics in the industry, I thought why not I write an article on how Data Science and AI can really impact the Food Processing sector.
